Tip 1: Choose Basmati Rice

The right rice for biryani is usually a long-grained variety with a firm texture that can withstand the cooking process without becoming too soft or sticky. Basmati rice is the most commonly used rice for biryani as it has a delicate, nutty flavor and a distinct aroma that complements the spices and flavors in the dish.

Tip 2: Rice must be old

While selecting Basmati rice for Biryani, it is important to select good quality old rice which has long grains and minimum number of broken grains. This will ensure that the rice is cooked evenly and does not become too mushy or lumpy. Old rice may appear pale yellow and will leave a powder on your hand when rubbed. Keep in mind that the rice you are using should be more than one year old.

Tip 3: Check the rice by biting it between your teeth

To check whether the rice you are using is old or new, here is a foolproof formula shared by Chef Pankaj. According to him, take a few grains of rice and chew directly in between your teeth. If rice is sticking between your teeth then it is new rice. But if this does not happen then the rice is too old for Biryani. Choosing the right rice is essential for making tasty biryani.
