Ingredients for Banjara Gosht

  • ½ kilo mutton
  • two teaspoons oil
  • two onions finely chopped
  • 5 red chilies
  • 2 black or large cardamoms
  • three mace
  • 3 to 4 small or green cardamom
  • 1 teaspoon cumin
  • 4 to 5 black pepper
  • coriander leaves
  • turmeric powder
  • chilli powder
  • Garlic-Ginger Paste
  • ½ cup curd
  • ½ tsp coriander seeds
  • salt to taste
  • Garam masala – 1 tbsp

Banjara Gosht Recipe

  • First of all wash and clean the mutton and now cook it in a pressure cooker by adding a pinch of salt and 2 cups of water.
  • After about 1 to 2 whistles, turn off the gas and let the cooker cool down.
  • Now put small cardamom, big cardamom, cinnamon, mace, black pepper and cumin in a mixie jar and make powder.
  • Now put oil in a thick pan and heat it, then fry the finely chopped onion till it turns golden brown. Now add red chillies to it.
  • Now add garlic ginger paste, coriander powder, turmeric powder and freshly ground garam masala and roast it well.
  • Now add water to it and cook till it starts boiling.
  • Now mix the mutton in the spices and keep the mutton stock in a separate bowl.
  • When the mutton and spices are well cooked, add the stock and beat it well by adding curd along with it. So that the curd does not break.
  • Now add chopped coriander seeds and let it cook on low flame for half an hour.
  • Lastly garnish it with coriander leaves
  • Your Banjara Gosht is ready, serve it hot with naan, rice, roti.
