Mix Veg Paratha
Material
2 cups whole wheat flour
1 cup chopped cauliflower
2 medium sized carrots
1 medium potato
¾ cup finely chopped spinach leaves
8 chopped french beans
2 green chilies finely chopped
½ inch finely chopped ginger
1 tsp coriander powder
1 tsp cumin powder
½ tsp red chili powder
¼ tsp turmeric powder
½ tsp garam masala
salt to taste
1 tbsp ghee

Wash and chop the vegetables. Boil them in a pressure cooker so that they cook well. Sieve the vegetables and let them dry. When they cool down, mash them together. Add finely chopped spinach. Add chopped coriander, green chillies and ginger. After this add all the spices. mix together. Knead the dough till it becomes smooth and soft. Let it stay for some time. Then start making medium sized balls from the dough. Roll the dough and put the stuffing. Cover it and roll it in a circular motion. Heat ghee on the pan and put the rolled parantha on the pan. Flip till cooked from both the sides. Serve hot with pickle and curd.
Beetroot Paratha
Material
2 cups wheat flour
½ tsp cumin
½ tsp garam masala
½ tsp dried mango powder
½ tsp ajwain
½ tsp salt
2 tbsp finely chopped coriander
1 tsp ghee
½ tsp ginger paste
1 chili (slit)
1½ cups grated beetroot
how to make
Take water for flour. In a large bowl, knead flour with oil, water and salt. Keep it aside. Pour some oil in a pan and add beetroot and onion. Mix all the spices and fry for a few minutes. Take some portion of the dough and roll it to make round shaped chapati. Seal by adding stuffing. Flatten again in a circular motion. Add some oil and let it cook from both the sides. Serve hot with pickle.
Cauliflower Jowar Paratha
Material
1 cup jowar flour
3 tbsp whole wheat flour
1 cup cauliflower
2 tbsp chopped coriander leaves
1/2 tsp ginger paste
1 tsp garlic paste
salt to taste
2 chopped green chilies
1/2 tsp turmeric powder
1 pinch asafoetida
1 tsp coriander powder
1 tsp cumin powder
water as needed
how to make
Cut the pieces of cauliflower and wash them. Boil them till they are cooked. Drain the water and mash the florets. Put all the spices in it, add jowar and maida. Mix it with the help of water and knead the dough. Break the dough into small balls and roll them like a chapati. Transfer to a tawa, sprinkle some ghee and cook. Flip to cook the other side. Serve hot with green chutney.
