- To make Rasmalai, you have to make chhena first.
- To prepare it, first boil 2 liters of milk in a vessel.
- Add 2 tbsp vinegar to it and mix it well.
- After some time the milk will curdle, keep stirring the milk until the water separates completely from the milk.
- After this put it on a cotton cloth and separate the water.
- Now squeeze the cloth well and hang it on a high place for half an hour, so that the remaining water in the chhena will come out.
- After this, mash the prepared chhena a little with hands and put it in a utensil and knead it.
- Now make small pieces of the prepared chhena, if you want to make it ball shape or flatten it by pressing it.
- Prepare all the chhenas in this way, cover them with a cloth and keep them aside.
- Now put sugar, cardamom and 7 to 8 cups of water in a pan and heat it.
- After the syrup is ready, first put the prepared chhena in it.
- Boil them with syrup until their size is almost doubled.
- After this, turn off the gas and cover the utensil and keep it aside.
- Now prepare to make rabdi and first of all heat 1 liter of milk in a pan.
- Add saffron threads to it and boil the milk while stirring.
- Milk has to be cooked until it becomes thick.
- After this add half a cup of sugar to the milk and mix it. Keep in mind that the milk should not become too thick.
- Now add cardamom powder and dry fruits to the milk and mix it well.
- Rasmalai’s Rabdi is ready. Now squeeze the rasmalai dipped in sugar syrup a little and keep it in a tray.
- After this, spread the prepared rabri over them.
- Keep the rasmalai aside for at least 4 hours, so that the flavor of rabdi mixes well in the rasmalai.
- After this, keep it in the fridge for some time to cool down.
- Your Rasmalai is ready, put it in a serving bowl and serve it with dry fruits on top.
