gond laddoos
material:-
250 grams whole wheat flour
100 grams gond – fried
200 grams powdered sugar
2 tbsp almonds – fried
2 tbsp cashews – fried
2 tbsp raisins
1 tsp green cardamom powder – optional
175 grams desi ghee + 4 tbsp at room temperature
3 tbsp peanut butter
How to make gond laddoos
Take ghee in a pan and melt it on low flame. Add 2 cups all-purpose flour and mix well with ghee. Meanwhile, when the dough starts to roast, put the fried nuts in a grinder jar or spice grinder. Put the roasted gum in the dry grinder jar. Grind coarsely and grind lightly. Grind gum in a grinder. Roast the flour until its color changes and you start smelling like walnuts. Then when you see that the color of the flour is changing, stir it without stopping. Fry the flour while stirring continuously till it turns golden or brown. Switch off the flame. Keep the pan down and add raisins and cardamom powder. After this add powdered sugar and peanut butter. Add the crushed gum and nuts mixture. Start mixing with a spoon. While mixing, if there are lumps of sugar in the laddu mixture, break them with a ladle or spoon. Mix very well. When the ladoo mixture is still warm and at medium temperature, take a heap size portion of it with a spoon or in your palms. Give it the shape of a round ladoo. Eat gond laddoos alone or with some warm or hot milk.
Fenugreek laddoos
material:-
Fenugreek / Fenugreek seeds – 50 grams
Milk – 1 cup
Wheat flour – 150 grams
Ghee – 3/4 cup
Peanut butter – 2 tbsp
Almonds – 15
Cashew – 20
Black pepper – 5
Cumin powder – 1 tsp
Dry ginger powder – 1 tsp
Ground cinnamon – 1 tsp
Cardamom powder – 1 tsp
Jaggery – 150 grams
Powdered sugar – 1/2 cup
How to make fenugreek ladoo
Grind fenugreek seeds finely. Add milk to the ground fenugreek and mix well. Let it soak for 5-8 hours. Fenugreek will absorb all the milk and knead thick dough. Add soaked fenugreek powder to the pan and fry till it turns brown. Take it out in a bowl. Pour 1/4 cup ghee in a pan and add chopped nuts. When it turns golden, add wheat flour and fry till the aroma comes. Add ground spice powder and crushed black pepper to the flour and mix. Roast it till the flour turns golden brown. Transfer it in a bowl. Heat the remaining ghee and add jaggery. Add 4-5 tbsp of water and heat the mixture on low flame till the jaggery melts. Boil it. Pour the syrup through a strainer into a bowl. Mix well. Add powdered sugar and peanut butter to the mixture and mix well with a ladle. Allow the mixture to heat up. Take a little mixture from the mixture and give it the shape of a round laddu. Take out the laddoos in a plate and keep them to air dry for 5-6 hours. Fill the laddoos in an airtight jar and keep them.
