- 1 cup parboiled rice
- 1 medium onion
- 1 large tomato
- 1 carrot
- 1 capsicum (green chili)
- 6 green beans
- 3 tbsp peas
- 1 tsp ginger paste
- 1 tsp garlic paste
- 2 tablespoons rice bran oil
- 1/4 tsp asafoetida
- 1/2 tsp mustard seeds
- 1/4 tsp cumin
- 1/4 tsp turmeric
- 1 tsp red chili powder
- 1/2 tsp coriander powder
- 1/4 tsp garam masala powder
- Salt as required
Masala Rice Recipe
- First of all cut all the vegetables like onion, tomato, capsicum, carrot and green beans. set them aside
- Now heat oil in a pan. Add asafoetida, cumin, mustard seeds and fry for a minute. Now add onion, ginger-garlic paste and mix it. Let it cook for a while. Now put chopped tomatoes with salt. Mix well and cook for a few minutes, till they become soft.
- Add all the vegetables like carrot, capsicum, peas and green beans. Add turmeric, red chili powder and coriander powder. Give a good mix and cover the pan with a lid. Let the vegetables cook for five minutes.

Lastly add the cooked rice to the pan and mix it gently in the spices. Add garam masala and stir..ensure you are not breaking the rice in the process. Cover the pan with a lid and cook for another two minutes.
After cooking, garnish with roasted cashews and serve with Raita.
