launji ingredients

  • Raw mango piece one to one and a half cup
  • Fennel seeds 1/2 tsp
  • Cumin 1/2 tsp
  • Rai 1/2 tsp
  • Red chili powder 1/2 tsp
  • Ajwain 1/4 tsp
  • Jaggery 1 cup
  • Chaat masala 1/2 tsp
  • Garam masala 1/2 tsp
  • Asafoetida 1 pinch
  • oil two table spoon
  • water 1 cup
  • always salt to taste

How to make Launji

  • To make Mango Launji, first wash the raw mangoes with water and cut them.
  • Now put two spoons of oil in a pan and heat it on medium flame.
  • When the oil becomes hot, add cumin, mustard, fennel and other spices including asafetida and fry it while stirring for some time.
  • When the aroma starts coming from the spices, put the raw mango pieces in the pan.
  • Cook it while mixing it with the spices with the help of a spoon.
  • After some time add red chili powder to it.
  • Now slow down the flame and add a cup of water to it and let the launji cook.
  • After adding salt as per taste, cover the pan and cook for 2 to 3 minutes.
  • When the launji melts, add crushed jaggery to it. After this, increase the flame of the gas.
  • Cook the launji until the jaggery melts well.
  • If its test is sour, then you can get some more jaggery.
  • After this add chaat masala, garam masala and mix it.
  • After cooking for some time, turn off the gas.
  • Your launji is ready, you can serve it with lunch or dinner.
